BREAKFAST RECIPE

To add flavor to these eggs you will be making, put a few slices of onion in the pan with butter or olive oil
before you begin to do anything. Put on low to medium flame. Watch the onions to make sure that they do not
burn. This may take a couple of minutes. Stir and toss the onions in the pan. Once the onions are fairly
well cooked but not burnt, go to the next step with the eggs. In the same pan, place 4 eggs in the frying pan
with olive oil sunny side up. Make sure that the yolk does not break on any of the eggs. It is preferred that
you get a frying pan that is made of stainless steel and can be covered with a glass lid. Put the eggs on the
lowest flame possible and let cook for 3 and ¾ minutes. Check to see if the egg white has turned white yet.
If it has, then the eggs are done. You may put fresh or cooked basil or oregano on the eggs when you begin to
cook them. The yolk of the eggs should still be runny or soft.

Before placing the eggs in the pan slice 3 zuchini into small slices. Put olive oil or butter into the bottom
of a stainless steel small pot. Heat the pot. Place the zuchinni into the pot. Set the flame or burner to
almost the lowest setting. Cover the pot. In 4 minutes you should stir the zuchinni. In another 3 minutes
or so the zuchinni should be fully cooked and soft. You may add garlic to either the eggs or the zucchini along
with some of the Italian seasoning mentioned.
